Scraps of Wisdom: Cary Taylor

carytaylorIf you’re going to venture out just once into the Global Warming tundra, make it for brunch. And don’t let those leftovers go to waste either. It’s going to be a long night, trust me. In the ongoing quest to solve the Great Soggy Brunch Leftovers Debacle, Chicago Brunch Blog asked Cary Taylor of Chaise Lounge for some ideas on how to salvage scraps:

“As far as using leftover omelets, one thing you could do is make a stir fry or fried rice with mushroom, pepper and some other vegetables and fold in your leftover eggs and rice.

“One thing we do at Chaise Lounge with our huevos al infierno dish — which are eggs baked in a spicy tomato sauce — we take the leftover sauce, puree the hell out of it with tomato juice and add some cayenne peppers, carrots and peppers. Then we take tortilla scraps and soak them in as a thickener and turn it into tortilla soup.” — Cary Taylor
