I have this idea that waffles could sometimes be savory instead of sweet. They seem like a good general-purpose vessel, where you could put some sausages and gravy on there, just for an e.g. What do you think?

Savory waffles are where it’s at, man. No longer are breakfast sausage and bacon confined to side dishes nor are we faced with the oppressive choice between a sugar-induced coma and cardiac arrest. Finally, we can have our bacon waffles and eat them too.
We can all thank Roscoe’s in Los Angeles for making chicken and waffles an institution, which are now starting to pop up all over Chicago at places like Eve, Chaise Lounge, Kitsch’n and Juicy Wine Company’s Breakfast Club on Saturday nights. Meanwhile, you can find bacon-infused waffles at Yolk, an occasional appearance at Birchwood Kitchen.
For batter that’s a little flatter, there are a number of savory Dutch pancakes at Pannekoeken, bacon and cornmeal griddle cakes at Bite Cafe and meat-free tamale corncakes at Chicago Diner. Happy brunching.
